Walnut Shortbread
4 cups walnut pieces
1 cup unsalted butter, softened
3/4 cup dark brown sugar
3/4 cup confectioners' sugar
2 tsp vanilla extract
2 cups unbleached flour
1/2 tsp kosher salt
granulated sugatr for sprinkling
Preheat oven to 325 degrees. Spread walnut pieces on baking sheet & toast for 5-7 minutes. Cool and transfer to a food processor. Pulse until finely ground. Reduce oven to 300 degrees. In an electric mixer, cream the butter, brown sugar and confectioners' sugar until smooth. Then beat in vanilla extract. In a separate bowl, stir together nuts, flour & salt. Add dry ingredients to butter mixture. Beat to form a soft dough. Wrap dough in plastic wrap and chill for 30 minutes. Grease 2 baking sheets. Divide dough in two pieces & roll out to 1/2 inch thickness on a lightly floured board. Using a cookie cutter, cut out cookies & place on baking sheet. Sprinkle each cookie with granulated sugar. Bake cookies for 12-15 minutes or until lightly brown.
